Watch the Gluten Intake, Celiacs!
As if all of the other symptoms weren’t reason enough to maintain a strict gluten-free diet, a new study claims to find a correlation between Celiac/Coeliac disease and cardiovascular disease.
While it is distressing to hear, the numbers show only a slightly higher risk, so more research is warranted. However, as I understand it, inflammation does often lead to cardiac distress, so the correlation does make sense.
So again, it just doesn’t pay to take chances with Celiac - stick to your diet!

I have actually had an easier time being gluten free. In the first month or so after I was diagnosed, I lost close to ten pounds because I really restricted the diet. Cecelia’s Market Place has a great website that will give you an email a day (free) and tell of a product that is gluten free.
Rice flour doesn’t make your bread too different compared to using white flour.

I am surprised to hear you aren’t fully gluten-free. My understanding was that gluten-sensitive folk had to go completely cold turkey to avoid further complications. I will check in with you from time to time to hear updates on your status. Best of luck to you!
